The hot weather is here in the Northwest and I’m ready with an easy evening cocktail.
I love a good lemondrop, and I’ve written a couple of times on how fun it is to make a big batch of Limoncello. See here and here for that info. I also love finding a good simple way to get similar results without sacrificing flavor, quality and my time. I saw this method a couple of weeks ago and gave it a try. I’m giving it two thumbs up. Ready in a jiffy, very tasty, and no waiting for the limoncello to mellow.
Start with a good quality Vodka. I chose Absolut Citron, because it has been infused with a little lemon to begin with. San Pellegrino Limonata is an Italian carbonated soda.
Run the cut lemon around the rim of the glass, then dip the glass rim in a bowl of fine sugar. The lemon is sticky and the sugar forms a tasty, crusty edge that adds to your drinking pleasure.
Pour about an inch of vodka, then fill the rest with limonata. Of course you can adjust it to your taste. I keep the vodka in the freezer so we don’t need ice cubes. Vodka won’t freeze and it’s always ready for the perfect cold drink. Simple!
