Yum, just writing those words makes me feel good. I’ve been enjoying one pancake and one farm fresh egg for breakfast for quite some time now. A little extra effort in the morning compared to dry cereal, but look at that title again…it’s hardly fair to compare. Only one cake and one egg, no bacon...not a big, hearty, weekend style breakfast.
I begin with a good, healthy mix, like Kodiak Cakes, using a couple of hefty tablespoons. I then add a rounded teaspoon of almond meal, 1/2 teaspoon of baking powder, a tablespoon of lemon juice (the baking powder and lemon juice fizz and add fluffiness), about 2 tablespoons (or a good glug or 2) of egg white and a teaspoon or two of honey. Add a splash of water for proper consistency then pour into the (preheated and non-stick sprayed) pan. Rinse a handful of frozen blueberries, shake off excess water and sprinkle them around the pancake. When underside is golden, carefully flip and cook for another couple of minutes.
Served with warm real maple syrup and a perfectly cooked organic egg, you’ve got the beginnings to a perfect day. On the weekends I simply mix up a more generous batch to share. I can hardly wait for those warm summer mornings when I can enjoy my breakfast outside. That really makes it the perfect morning.
