We had hamburgers the other night. The beef was from the half quarter we got this fall. Healthy, grass fed cow that I think of and thank every time I make a meal using it.
For the fries I peeled and cut up a yam. We used bagel thins for our buns and spinach for our greens. All in all a pretty healthy dinner.
For the sweet potato/yam fries I put the cut yams in a pan on the stove. I added a slight drizzle of olive oil and a generous sprinkling of salt. I tossed them around then set aside.
I did the same with the onions then brought them back together and put them in a 350 degree oven for about 20 minutes. We used the onions in the burger and ate the fries with our fingers, as usual. The whole family enjoyed the meal.
I can’t believe that after all these years my family finally likes sweet potato fries, even home made ones. Yay!
Enjoy!
