This recipe comes from the Holiday Handbook special issue from Martha Stewart. These baked cheese coins are the perfect simple appetizer. The dough can be made ahead by even as much as a month if kept frozen. The little biscuit like wafers can be baked a day or two before you need them. Beware though, they are quite addictive if sampled.
As suggested in the recipe I used a store bought jalapeño jelly. I also opted to use just a dab of cream cheese on each one. The cool cream cheese offsets the spicy jelly nicely.
The dough is rolled in 4 separate logs and cut before baking, then cooled on a wire rack. This is when the sampling begins.
I plan on trying them again during the holidays. The amount of cayenne pepper is not overwhelming but gives just the slightest warmth. I think they’ll become a tradition rather quickly.
