Ok it’s pretty corny; I know. But wraps are so easy and everyone can make their own from all the choices. They're kind of a cross between a sandwich and a salad.
I like using a low-carb tortilla. The above wrap has chicken, spinach, bulgur wheat, cucumber, feta, pistachio nuts, pineapple/mango salsa and a little olive oil/balsamic dressing. Wrap it up and it’s good to go.
Another favorite is brown rice, mango chunks, cucumber chunks, cherry tomatoes, golden raisins and slivered almonds. You just can’t go wrong.
This one combines chicken, spinach, coastal cheddar, avocado and bulgur. I added a drizzle of blue cheese dressing to hold it altogether and add more pizazz.
This one is a favorite too. It’s like a Caprese salad. Chicken, mozzarella, basil, cherry tomatoes (halved), salt, olive oil, balsamic vinegar. Yum!
Preparation is much like a salad bar. Chop all the veggies you can think of and put them in separate containers. Have shredded cheese and feta available. Put out the lettuce and spinach. Provide chicken, turkey or whatever the favorite meat is. Supply extras like salsas, beans, spreads, whatever. Don’t forget a few nuts, brown rice or bulgur wheat for fiber. Each person grabs a warm tortilla and travels through the food line creating their own personal favorite wrap.
Wraps are perfect for families on the go who have to eat at different times. If it’s all chopped and in the fridge everyone can quickly combine their favorite veggies for a healthy meal. With enough chopping, shredding and peeling everyone in the house will be set for a week of lunches or dinners. I’ll bet they’ll all eat healthier too.
