A sunny morning, blueberries are in season; what else can one do but make blueberry pancakes for breakfast?
I almost always begin with a mix. One of my favorites is Snoqualmie Falls Lodge NutraRich Pancake and Waffle Mix. I add milk, a couple of eggs, a teaspoon of baking powder, a tablespoon or two of lemon juice, a splash of vanilla and a teaspoon of sugar.
I ladle the batter onto a quite hot skillet, then add a handful of blueberries. I wait, patiently, then flip the cake and give it the tiniest press to pop the skin of the berries. Another minute or two on the skillet and they are ready to enjoy with warm, real maple syrup.
