As promised last week, I bring you the second wonderful salad from our Easter brunch. It’s such a beautiful, simple summer salad.
I will be planting a yellow cherry tomato in my vegetable garden in a few weeks because I know I’ll want to enjoy this salad this summer. It’s fresh, delicious and makes a lovely presentation to any table.
4 TBL vinegar
2 TBL olive oil
1 clove garlic
1 large cucumber, seeded, halved and sliced
6-8 small roma tomatoes (halved or quartered)
1/2 container of small super sweet yellow cherry tomatoes (halved)
2 oz. mozzarella cheese, sliced
1/2 cup thinly sliced basil
Mix first three ingredients together for dressing and set aside.
Assemble salad with remaining ingredients and toss with dressing.
This will serve 4-6 as a side salad. Enjoy!
